My Family's Pork and Garlic Shoot Stir-Fry
- 80 grams Pork belly, offcuts, etc
- 100 grams Garlic shoots
- 1 large King oyster mushroom (or your favourite mushrooms)
- 1 tbsp Oyster sauce
- 1 tbsp Soy sauce
- 2 tbsp Sake or shaoxing wine
- 1 tsp Sugar
- 1 appropriate quantity to thicken Katakuriko slurry
- Chop all the ingredients into bite-sized pieces.
- Mix all seasonings.
- Heat oil (sesame oil if available) in a frying pan, and stir-fry the pork.
- When the colour of the pork starts to change, add garlic shoots and king oyster mushrooms, then continue stir-frying.
- When they start to cook through, add the seasonings.
- Bring to a boil, and pour in the dissolved katakuriko.
- Mix well so that the sauce is evenly absorbed, then it's done.
