Banana Butter Pecan Cookies Recipe
- 1 c. Butter
- 2/3 c. Granulated sugar
- 1 x Egg
- 1/4 c. Light molasses
- 1 c. Mashed bananas
- 2 1/2 c. All-purpose flour
- 1 1/2 tsp Baking soda
- 1 tsp Grnd cinnamon
- 1 c. Pecans minced
- Preheat oven to 350 degrees; grease cookie sheets.
- In a large bowl with an electric mixer on medium speed, beat the butter till fluffy.
- Gradually add in the sugar; beat till light and fluffy.
- Beat in the egg, molasses and banana.
- In a medium bowl, combine the flour, baking soda and cinnamon.
- Gradually add in the flour mix to the butter mix; beat till thoroughly blended.
- Stir in the minced nuts.
- Drop the dough by rounded teaspoonfuls 2 inches apart onto the prepared cookie sheets.
- Bake for 12 to 15 min, or possibly till the center of the cookies spring back when lightly touched.
- Remove to wire racks to cold
