Hopping John

  1. Place peas in large pot.
  2. Add enough water to cover peas by 2 inches.
  3. Bring to boil; boil 2 minutes.
  4. Remove from heat.
  5. Let stand 1 hour.
  6. Add ham meat and bone, onions and pepper flakes to peas.
  7. Add enough water to cover peas and meat by 2 inches; cover.
  8. Cook on medium heat about 30 minutes or until peas are tender.
  9. Add additional water if necessary to keep the peas juicy.
  10. Stir in rice; let simmer 20 minutes or until rice is tender.
  11. Stir in the pickle relish and Singles.
