Roasted Green Beans from Heaven
- 1 -2 lb fresh green beans
- 2 tablespoons shallots, finely chopped (or onion)
- 1 -2 tablespoon olive oil
- 12 teaspoon kosher salt (to taste)
- 12 teaspoon good seasons italian dry salad dressing mix
- 3 -4 slices bacon, cooked & crumbled
- 12 cup chicken broth, strong
- Fry bacon to desired crispness -- when done, place between 2 sheets paper towel to cool & absorb away any fat.
- Dissolve 1 chicken boullion cube in 1/2 cup boiling water & set aside to cool.
- Snap ends off green beans -- leave whole or snap to desired length.
- Rinse well & drain.
- Finely chop shallot (or onion)
- Preheat oven to 325.
- Place green beans & chopped shallot (onion) in a casserole dish.
- Sprinkle with the olive oil & toss to coat.
- Sprinkle with the kosher salt & italian seasoning & toss again.
- Crumble the bacon & place in casserole with the green beans & shallots.
- Toss again.
- Carefully pour in the chicken broth as not to wash away any of the seasoning from the green bean mixture.
- Cover & roast in oven for 1-1 1/2 hours.
