Torta de Bistec y Huevo Frito
- Broccoli Slaw
- 2 qt. large broccoli florets
- 2 cups plain low-fat yogurt
- 1 cup pepitas, toasted
- 1 cup A.1. Original Sauce
- Grilled Chiles
- 32 strips poblano chiles, seeded, cut into thick strips
- 32 strips banana peppers, seeded, cut into thick strips
- 2 Tbsp. canola oil
- Assembly
- 16 each bolillo rolls
- Grilled boneless beef sirloin steaks, sliced
- 2/3 cup Grated Cotija cheese
- 16 each eggs, fried over-easy
- Broccoli Slaw: Grill broccoli 4 min.
- or until charred, turning frequently.
- Cool.
- Chop broccoli then combine with remaining ingredients.
- Refrigerate until ready to use.
- Grilled Chiles: Brush pepper strips with oil.
- Grill 4 min.
- on each side or until charred.
- Cool.
- Assembly: Fill each roll with 4 Grilled Chiles, 3 oz.
- steak, 1/2 cup Broccoli Slaw, 2 tsp.
- cheese and 1 egg.
