Vickys Coconut Ice Sweets
- 400 grams Vickys Condensed Coconut Milk from my recipe attached below
- 500 grams icing sugar / powdered sugar
- 350 grams desiccated (finely shredded) coconut
- Add the ingredients to a large bowl and knead to combine
- Split the dough in half and press half into an 8" square lined tin
- Knead some pink food colouring into the other half of the dough until evenly coloured
- Press into the tin on top of the white dough
- Let sit in the fridge for a good 3 hours until set
- Cut into inch squares and enjoy!
