Vickys Coconut Ice Sweets

• 400 grams Vickys Condensed Coconut Milk from my recipe attached below
• 500 grams icing sugar / powdered sugar
• 350 grams desiccated (finely shredded) coconut

1. Add the ingredients to a large bowl and knead to combine
2. Split the dough in half and press half into an 8" square lined tin
3. Knead some pink food colouring into the other half of the dough until evenly coloured
4. Press into the tin on top of the white dough
5. Let sit in the fridge for a good 3 hours until set
6. Cut into inch squares and enjoy!
