Stuffed Parmesan-Zucchini Pizza

  1. Heat oven to 375F.
  2. Cut zucchini lengthwise in half; scoop out centers, leaving 1/4-inch-thick shells.
  3. Place shells on rimmed baking sheet.
  4. Chop zucchini pulp.
  5. Combine cheeses in medium bowl, reserving 1/4 cup for later use.
  6. Stir in pizza sauce, pepperoni, basil and chopped zucchini pulp.
  7. Spoon into zucchini shells.
  8. Sprinkle with reserved cheese mixture.
  9. Bake 25 to 30 min.
  10. or until heated through.
