Chicken Croquettes
- 16 (18 ounce) cans cooked chicken, drained
- 1 cup onion, finely chopped
- 3 tablespoons butter
- 14 cup flour
- 12 cup chicken broth
- 13 cup milk
- 1 tablespoon dried parsley
- 1 teaspoon lemon juice
- 14 teaspoon salt
- 14 teaspoon pepper
- 18 teaspoon paprika
- 18 teaspoon nutmeg
- 1 cup fine dry breadcrumb
- 2 eggs, lightly beaten
- 2 tablespoons water
- Combine chicken and onion, set aside.
- In a saucepan, melt butter, add flour and blend until smooth.
- Add chicken broth and milk.
- Cook until thick.
- Remove from heat.
- Stir in parsley, lemon juice, salt, pepper, nutmeg and paprika.
- Add chicken mixture and mix well.
- Chill at least 1 hour.
- Preheat oil to 340F.
- Roll chicken mixture into 1-1 1/2 inch balls.
- Mix egg and water.
- Dip each ball into egg mixture and roll in bread crumbs.
- Place into oil.
- Cook 2-3 minutes or until done.
