Hapa Salad
- 1 chicken breast
- romaine lettuce
- spring greens
- 14 cup juillienned carrot
- 14 cup celery, diagonal cut
- 14 cup scallion, diagonal cut
- 1 cup peanut sauce
- 6 ounces rice noodles or 6 ounces fettuccine
- fire grill marinated chicken breast and glaze with teriyaki sauce.
- cook noodles -- al dente and drain.
- plate greens carrots celery and scallions.
- in sautee pan;heat noodles and peanut sauce.
- add grillied chicken.
- blend all ingredients.
- place warm on top of salad greens.
- top with fresh chopped peanuts and cilantro.
