Ham Pot Pies Recipe
- Pie crust for 1 (9 inch) pie crust
- 5 tbsp. butter
- 1 pound potatoes, peeled & diced
- 1 onion, diced
- 1/3 c. flour
- 1/2 teaspoon salt
- 1/4 teaspoon thyme
- 2 3/4 c. lowfat milk
- 1 c. frzn peas
- 1 (8 ounce.) pkg. sliced cooked ham, diced
- 1 egg, beaten
- About 45 min before serving: Prepare pie crust.
- Roll pastry 1/8 inch thick.
- Cut out 4 pastry circles, 1/2 inch larger than top of 12-oz casserole; cut out 1/2 inch circle from center of each.
- Reroll trimmings for design on pastry circle; cover.
- In 3-qt saucepan over medium heat, in warm butter, cook potatoes and onion till tender, stirring.
- Add in flour, salt and thyme; cook 1 minute.
- Stir in lowfat milk; add in peas and ham; cook, stirring, till thickened; ladle into casseroles.
- Preheat oven to 400 degrees.
- Press a pastry circle on top of each casserole; brush with egg.
- Bake 20 min till golden brown.
- Makes 4 main dish servings.
