Iceberg Wedges with Creamy Blue Cheese Dressing

  1. Whisk mayonnaise, 1/2 cup blue cheese, yogurt, buttermilk, and vinegar in medium bowl until almost smooth.
  2. Mix in remaining blue cheese.
  3. Season dressing generously with cracked black pepper.
  4. (Can be made 1 week ahead.
  5. Cover and refrigerate.)
  6. Arrange lettuce wedges on 8 plates.
  7. Spoon dressing over lettuce.
  8. Sprinkle with green onions and additional black pepper and serve.
