Ham and Cheese Waffles
- 3 eggs
- 2 cups milk
- 14 cup vegetable oil
- 14 cup applesauce
- 1 cup whole wheat flour
- 1 cup all-purpose flour (or use all whole wheat if you have ww pastry flour)
- 12 cup quick-cooking grits (uncooked)
- 2 teaspoons baking powder
- 2 teaspoons sugar
- 14-12 teaspoon salt
- 1 12 cups part-skim mozzarella cheese, shredded (I'm sure cheddar would be delicious too)
- 12-34 cup cooked ham, cubed or finely chopped
- In a bowl, beat eggs, milk and oil, and applesauce.
- Combine flour, baking powder and salt and sugar; add to egg mixture stir gently until combined (a few lumps may remain).
- Fold in cheese and ham.
- Bake in a waffle iron according to manufacturer's directions until golden brown.
- Top with a fried egg or butter and honey.
