Asian Slaw
- 2 tablespoons fresh lime juice
- 2 tablespoons rice vinegar (unseasoned)
- 1 tablespoon vegetable oil, such as safflower
- 2 teaspoons sugar
- Coarse salt
- 1/2 small head Savoy or green cabbage quartered, cored, and shredded
- 1 cup fresh cilantro leaves
- 4 scallions, trimmed and cut into matchsticks
- 1 medium carrot, grated
- 1/2 jalapeno chile, minced (ribs and seeds removed for less heat, if desired)
- In a large bowl, whisk together lime juice, vinegar, oil, and sugar; season with salt.
- Add cabbage, cilantro, scallions, carrot, and jalapeno.
- Toss to combine.
- Let stand 15 minutes before serving.
