Greek-Style Beans
- 2 cups fresh breadcrumbs
- 3 tablespoons olive oil
- 2 tablespoons chopped fresh parsley
- 2 teaspoons lemon zest, minced
- salt
- 12 cup onion, diced
- 2 tablespoons olive oil
- 1 tablespoon garlic, minced
- 2 cups tomatoes, chopped
- 12 teaspoon dried thyme leaves
- 2 (15 ounce) cans cannellini beans, drained and rinsed
- 34 cup chicken broth
- 2 tablespoons honey
- 1 tablespoon fresh lemon juice
- salt and pepper
- Preheat oven to 400.
- Combine crumbs, 3 TB oil, parsley, zest, and salt in a bowl; set aside.
- Saute onion in 2 TB oil in large cast iron skillet or oven proof pan over med-heat.
- Cook until soft 2-3 minute.
- Add garlic and saute another minute.
- Stir in tomatoes and thyme, simmer 2 min, then add beans, broth, honey, lemon juice, salt, and pepper.
- Bring to a simmer, sprinkle crumbs over beans, then transfer pan to the oven.
- Bake until beans are bubbly and crumbs are crisp, 20 minute.
