Smokin Black Bean Soup
- 1 lb black beans, soaked and rinsed
- 12 ounces hickory smoked ham
- 2 carrots
- 1 medium onion
- 3 pieces celery
- 2 tablespoons minced garlic
- 6 chicken bouillon cubes
- 6 -8 cups water
- 2 tablespoons chili seasoning mix
- 14 cup butter
- In a stock pot, melt butter and add chopped carrots, onion, celery and garlic.
- Saute' till onions are caramelized.
- Add boullion cubes, chilli seasoning and 6 C water.
- Bring to a boil, add beans and reduce to a simmer.
- Cover with the lid tilted and simmer for 2-2.5 hrs adding enough water occasionally to keep soupy.
- Serve with a dallop of sour cream and shredded cheddar, garnish with fresh chives.
