Smokin Black Bean Soup

  1. In a stock pot, melt butter and add chopped carrots, onion, celery and garlic.
  2. Saute' till onions are caramelized.
  3. Add boullion cubes, chilli seasoning and 6 C water.
  4. Bring to a boil, add beans and reduce to a simmer.
  5. Cover with the lid tilted and simmer for 2-2.5 hrs adding enough water occasionally to keep soupy.
  6. Serve with a dallop of sour cream and shredded cheddar, garnish with fresh chives.
