Spinach Spaetzle
- 2 1/2 c. all-purpose flour
- 1 package frozen chopped spinach
- 2 large eggs
- 1 1/2 c. milk
- 1/4 tsp. ground nutmeg
- 1 tsp. salt
- 2 tbsp. margarine
- 2 tbsp. Parmesan cheese
- 1/4 tsp. ground black pepper
- In 6-quart saucepot over high heat, heat 4 quarts water to boiling.
- Meanwhile, in medium bowl, with spoon, beat flour, spinach, eggs, milk, nutmeg, 1/2 teaspoon salt, and 1/2 cup water until smooth.
- Reduce heat to medium; over simmering water, with rubber spatula, press mixture through spaetzle maker (or colander or grater with large holes).
- Cook spaetzle 2 to 3 minutes until tender but firm, stirring gently so spaetzle doesn't stick together; drain well in colander.
- In nonstick 12-inch skillet over medium-high heat, heat margarine or butter, Parmesan, pepper, and 1/2 teaspoon salt until margarine melts.
- Stir in spaetzle; heat through.
