Cazuela De Elsa

  1. In a tall narrow stockpot, bring the carrots, onion, sweet potato, chicken, garlic, salt, and 5 cups (25 l) water to a boil.
  2. Lower the heat and simmer for 15 minutes.
  3. Stir in the bell pepper, tomato, and corn.
  4. Cover.
  5. Bring to a boil.
  6. Lower the heat and simmer, partially covered, for 5 minutes.
  7. Stir in the cilantro and pepper.
  8. Simmer for 2 more minutes.
