Creole Red Beans & Sausage
- 3-3/4 qt. Small dried red beans
- 2-3/4 gal. water
- 2-3/4 qt. OSCAR MAYER Polish Kielbasa, 5:1 6, cut into 1/4-inch-thick slices
- 2-1/2 qt. onions, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 1-1/4 qt. green peppers, chopped
- 2/3 cup Creole seasoning
- 1/3 cup Fresh garlic, minced
- 2 Tbsp. salt
- Mix beans and water in large saucepot.
- Bring to boil.
- Reduce heat to low; simmer 3 minutes.
- Remove from heat.
- Let stand, covered, 1 hour.
- Add remaining ingredients; mix well.
- Bring to boil; cover.
- Simmer 1 hour.
- Remove cover; continue to simmer 30 minutes or until beans burst and sauce thickens to desired consistency, stirring occasionally.
