Easy Goulash

  1. Heat oil in a Dutch oven over medium-high heat.
  2. Add beef, browning on all sides.
  3. Remove beef from pan.
  4. Add tomato, onion, bell pepper, and garlic; saute 10 minutes.
  5. Return beef to pan; stir in potatoes and remaining ingredients.
  6. Bring to a boil; cover, reduce heat, and simmer 1 1/2 hours or until the beef is tender.
  7. Serve with a hearty bread and butter.
  8. This can be served over mashed potatoes, cooked egg noodles or rice.
  9. NOTE: follow directions through step 3, add all ingredients to crock-pot and cook on low heat for 4 hours.
