Onion and sausage omelette
- 6 eggs
- 1 large onion, chopped
- 2 garlic cloves, finely chopped
- 1 handful of parsley, chopped
- 1/4 tsp salt
- 2 frankfurters, sliced
- 1/4 tsp ground black pepper
- 1 1/2 tbsp olive oil, extra virgin
- 1 tsp white wine vinegar
- In a bowl whisk the eggs.
- Add into the whisked eggs the frankfurters, onion, salt, black pepper, vinegar, garlic and parsley.
- Mix well using a fork.
- In a large saucepan, over a medium heat, add in the olive oil.
- Make sure the bottom of the pan is coated well and heated before adding In the egg.
- Add the eggs into the pan and spead evenly.
- Fry on low - medium heat for 10-15 minutes or until the top of the omelette is solid enough to turn.
- Turn and fry for a further 5-10 minutes.
- Once done slide onto a plate and serve immediately.
