Boudin' Blanc Recipe

• 2 1/2 lb Pork butt
• 2 1/2 lb Chicken, grnd
• 2 1/2 tsp Kosher (coarse) salt
• 2 1/2 Tbsp. White pepper
• 2 1/2 c. Onion, chopped
• 4 Tbsp. Butter
• 2 x Egg
• 1/4 bn Parsely, fresh
• 1/2 tsp Nutmeg
• 1/4 tsp Ginger
• 1/8 tsp Cloves
• 1/8 tsp Cinnamon
• 2 1/2 c. Rice, cooked

1. Heat butter and saute/fry onions.
2. Mix Large eggs and spices.
3. Combine onions, parsley and rice with meats.
4. Fold in Large eggs and spices.
5. Shape into links and cook.
