Italian Eggs Florentine

  1. Sprinkle bacon with Italian seasoning.
  2. Bake in a 350F-convection oven for 8 to 10 minutes or until crisp; drain.
  3. For each serving: Whisk 2 eggs in small microwavable bowl until foamy.
  4. Microwave on HIGH 1-1/2 to 2 minutes or until set, stirring after 1 minute.
  5. Cover bottom half of English muffin with 1/2 cup spinach; top with eggs, 2 bacon slices with top of muffin.
  6. Serve immediately.
