Italian Eggs Florentine
- 100 slices OSCAR MAYER 18-22 Slice Count Raw Bacon Flat Pak
- 1/4 cup Dried Italian seasoning
- 100 each eggs
- 50 each English muffins, split, toasted
- 1-1/2 gal. Fresh spinach leaves, cleaned, torn
- Sprinkle bacon with Italian seasoning.
- Bake in a 350F-convection oven for 8 to 10 minutes or until crisp; drain.
- For each serving: Whisk 2 eggs in small microwavable bowl until foamy.
- Microwave on HIGH 1-1/2 to 2 minutes or until set, stirring after 1 minute.
- Cover bottom half of English muffin with 1/2 cup spinach; top with eggs, 2 bacon slices with top of muffin.
- Serve immediately.
