Cranberry Orange Pecan Quick Bread

  1. Preheat oven to 325F.
  2. Combine eggs and oil.
  3. Sift in dry ingredients, and blend with an electric mixer.
  4. Don't overmix.
  5. Stir in the last three ingredients with a spoon.
  6. Pour into a greased and floured loaf tin.
  7. Bake at 325F for 30-40 minutes, until a toothpick inserted in comes out with only a few crumbs clinging to it.
