Beef and Bean Burritos
- 1 tablespoon vegetable oil
- 12 lb ground beef
- 1 teaspoon chili powder
- 12 teaspoon salt
- 14 teaspoon ground cumin
- 12 cup refried beans
- 1 (4 ounce) canchopped mild chiles
- 1 jalapeno pepper, seeded and chopped
- 80 inches flour tortillas
- 34 cup salsa
- 34 cup shredded monterey jack cheese
- Heat oil in large skillet over medium high heat.
- Add beef and cook, stirring until browned, 4-5 minutes.
- Place beef, chili powder, salt, cumin, refried beans, chiles, and jalapeno pepper in a food processor and process 3-4 seconds.
- Wrap 2 batches of 4 tortillas each in paper towels and microwave on high for 1 minute, until warm.
- Place 1-2 tablespoons filling in a strip just below middle of each tortilla.
- Fold ends over filling to enclose it partially, then roll up tortilla into a tight cylinder.
- Arrange burritos on a platter and top with salsa and cheese.
