Winter Squash Spice Muffins
- 2 14 cups flour
- 23 cup brown sugar
- 12 cup sugar
- 2 teaspoons cinnamon
- 18 teaspoon nutmeg
- 18 teaspoon allspice
- 18 teaspoon clove
- 18 teaspoon ginger
- 2 12 teaspoons baking powder
- 14 teaspoon salt
- 12 cup butter, softened
- 1 large egg
- 34 cup cooked mashed acorn squash or 34 cup butternut squash or 34 cup pumpkin or 34 cup buttercup squash
- 12 cup golden raisin
- 1 teaspoon orange zest
- 1 cup buttermilk
- sugar, for tops as garnish
- Heat oven to 400 degrees.
- Grease muffin tin with butter.
- Mix flour, sugars, spices, baking powder and salt in large bowl.
- Cut in butter with pastry blender (I use food processor pulsing till crumbly) or knives until mixture is like fine crumbs.
- Beat egg in a medium bowl; stir in squash, peel, raisins, and buttermilk.
- Add to flour mixture until just blended.
- Fill muffin cups 3/4 cups full.
- Sprinkle tops with sugar.
- Bake 20-25 minutes until lightly browned and center is done when tested with a toothpick.
- Makes 12 muffins.
