West Virginia Onion Rings
- 4 lg. Bermuda onions
- All-purpose flour
- 4 lg. eggs, well beaten
- 2 cups milk
- Cracker meal
- Deep fat
- oil
- Peel onion and cut into 1/8-inch thick slices.
- Separate into rings; dip rings into flour.
- Beat eggs with milk.
- Dip flour-coated rings into egg and milk, then dip into cracker meal.
- Fry onion rings in deep fat at 360F for two to three minutes, or until onion rings are golden brown.
- Drain on absorbent paper.
- Serve hot with broiled steak.
