Caprese Frittata

  1. Preheat oven to 375F.
  2. Clean your cherry tomatoes and slice them in half.
  3. Slice the basil into bite-sized pieces.
  4. Beat together eggs and cream with a little salt and pepper.
  5. Melt butter to coat a non-stick pan.
  6. Pour the beaten eggs into the warm pan.
  7. Break up the mozzarella and scatter it over the eggs.
  8. Similarly, scatter the tomatoes and basil over the eggs.
  9. Shake the pan or use a utensil to push the basil mostly below the surface of the egg.
  10. Place the pan in the oven and bake for 10-15 minutes, just until the surface of the egg is set.
