Easy Sweet Potato Snacks in a Toaster Oven
- 2 medium Sweet potatoes
- 30 grams Butter
- 60 grams Sugar
- 2 tbsp Milk
- 1 dash Salt
- 1 Egg yolk
- 1 tbsp Rum (if available)
- 1 Egg yolk for glazing
- Peel the sweet potatoes.
- Soak in water to remove any scum.
- Drain the sweet potatoes and microwave for 10 minutes to soften.
- Poke with a bamboo skewer to see if it goes through easily.
- (The other alternative would be to boil them.)
- Mash the sweet potatoes finely while still hot.
- (To make it even smoother, pass it through a strainer.)
- Melt the butter in a pan.
- Add the mashed sweet potatoes, sugar, milk, and salt.
- Stir over low heat.
- When the excess moisture evaporates from the sweet potatoes and the batter thickens, transfer the pan onto a damp cloth.
- Let cool.
- Add egg yolk and rum and mix some more.
- When done, shape to your liking.
- Brush on the egg yolk to glaze.
- Top with black sesame seeds and bake in a toaster oven for 10 minutes.
- When using a regular oven, preheat to 180C and bake for 10 minutes.
