Quick & Healthy Buffalo Chicken Chili

  2. Heat the oil in a large pot over medium low heat.
  3. Add the onions and garlic.
  4. Stir until translucent and fragrant.
  5. Add the carrots and cook until soft.

  7. To the vegetable mixture, add tomatoes and beans.
  8. Mix well.

  10. In another pan, saute ground chicken, adding cumin, paprika, and chicken broth until meat is cooked through and spices are well mixed.

  13. Add chicken to vegetable mixture, stirring well to combine.

  15. Stir in the Buffalo sauce and bring to a boil.
  16. Reduce heat and simmer over medium-low heat about 1 hour.

  18. Season to taste with salt and pepper.
  19. Serve with bleu cheese, if using.
