Quick & Healthy Buffalo Chicken Chili
- 1 Tablespoon Extra Virgin Olive Oil
- 1 whole White Onion, Diced
- 6 cloves Garlic, Minced
- 16 ounces, weight Carrots, Diced
- 1 can (28 Oz. Size) Crushed Tomatoes
- 1 can (16 Oz. Size) Cannellini Beans
- 1 pound Ground Chicken Breat (or Turkey)
- 1/2 Tablespoons Cumin
- 1 Tablespoon Paprika
- 1/2 cups Chicken Broth
- 1/2 cups Franks Red Hot Buffalo Wing Sauce
- Salt And Pepper, to taste
- 1 cup Bleu Cheese, For Serving (optional)

- Heat the oil in a large pot over medium low heat.
- Add the onions and garlic.
- Stir until translucent and fragrant.
- Add the carrots and cook until soft.

- To the vegetable mixture, add tomatoes and beans.
- Mix well.

- In another pan, saute ground chicken, adding cumin, paprika, and chicken broth until meat is cooked through and spices are well mixed.
- Do not drain.

- Add chicken to vegetable mixture, stirring well to combine.
- 5.
- Stir in the Buffalo sauce and bring to a boil.
- Reduce heat and simmer over medium-low heat about 1 hour.
- 6.
- Season to taste with salt and pepper.
- Serve with bleu cheese, if using.
