Chocolate Mint Layer Cookies
- 2 (1 ounce) unsweetened chocolate squares
- 12 cup butter
- 1 cup sugar
- 34 cup flour, sifted
- 2 eggs, slightly beaten
- 1 teaspoon vanilla
- 1 12 cups powdered sugar
- 2 tablespoons butter, softened
- 34 teaspoon peppermint extract
- 2 tablespoons heavy cream or 2 tablespoons evaporated milk
- green food coloring
- 3 ounces German sweet chocolate
- 2 tablespoons butter
- 2 tablespoons butter
- 2 teaspoons vanilla
- 12 inch piece paraffin wax
- Cookies Layer:.
- Melt butter and chocolate over low heat.
- Mix flour & sugar.
- Add to chocolate mixture.
- Add eggs & vanilla.
- Pour into greased 9x9x2 inch pan.
- Bake at 350 degrees for 20 minutes.
- Cool.
- Mint Filling:.
- Combine ingredients and beat until smooth.
- Spread over cookie layer.
- Chill until firm.
- Glaze:.
- Melt ingredients.
- Spread over cookies.
- Cut into 1 inch squares.
