Pea & Wild Rice Salad

  1. Puree peas, half-and-half, and butter in blender until smooth.
  2. Combine rice, chickpeas, feta and vinaigrette.
  3. For each serving: Spoon about 3 oz.
  4. pea puree onto plate; top with about 1-1/4 cups rice mixture.
  5. Garnish with 1/3 cup each radicchio and pea shoots.
