Pea & Wild Rice Salad
- 5-1/3 cups frozen peas, thawed
- 2 cups half-and-half
- 5-1/3 Tbsp. butter, softened
- 1 gal. wild rice, cooked
- 2 cups chickpeas (garbanzo beans), cooked
- 2 cups feta cheese, crumbled
- 1 qt. KRAFT Greek Vinaigrette
- 5-1/3 cups radicchio leaves, oven roasted until crisp
- 5-1/3 cups pea shoot greens
- Puree peas, half-and-half, and butter in blender until smooth.
- Combine rice, chickpeas, feta and vinaigrette.
- For each serving: Spoon about 3 oz.
- pea puree onto plate; top with about 1-1/4 cups rice mixture.
- Garnish with 1/3 cup each radicchio and pea shoots.
