Onion Jam
- 5 slices Bacon
- 5 whole Yellow Onions, Peeled And Sliced
- 2 teaspoons Salt
- 2 cups Apple Cider
- 1/4 cups White Wine Vinegar
- 1/4 cups Brown Sugar (lightly Packed)
- 2 Tablespoons Thyme Leaves
- Salt And Pepper, to taste
- Heat a large pan over medium heat.
- Add bacon to pan and cook, turning often, until crispy.
- Transfer the bacon to a paper towel to drain.
- Leave about 1 tablespoon of the grease in the pan to cook the onions.
- Add the sliced onions and salt to the hot pan and stir to coat with the bacon grease.
- Allow the onions to soften over medium heat for about 20 minutes.
- Once the onions have softened, add the apple cider, vinegar, brown sugar, and thyme.
- Crumble the cooked bacon and add to the pan.
- Stir until everything is combined and cook over medium heat for about 20 minutes.
- Reduce the heat to low and cook, stirring occasionally, until all of the liquid has evaporated and the onions have turned into a jam consistency.
- They should be a deep brown color.
- This should take about 3 to 4 hours.
- Season to taste.
