Sweet and Salty Simmered Beef and Burdock Root

  1. Shave the burdock root as if you were sharpening a pencil with a knife.
  2. Soak the shavings in a bowl of water with a little vinegar added.
  3. When all the burdock root is shaved, drain it well.
  4. If you leave it soaking for too long it will lose its fragrance so be careful.
  5. Stir fry the burdock root in 1 tablespoon of sesame oil, and remove from the pan.
  6. Cut the beef into bite-sized pieces, and massage in the sugar and sake.
  7. Leave for a bit, then massage in the soy sauce and katakuriko.
  8. Sprinkle the beef with 1 tablespoon of oil, and separate out the pieces.
  9. Add the a frying pan and stir-fry, then add the pre-cooked burdock root.
  10. Add the ingredients, simmer and reduce, and it's done.
  11. Sprinkle with some shichimi spice to taste.
