Sweet and Salty Simmered Beef and Burdock Root
- 350 grams Thinly sliced beef (shoulder) offcuts
- 1 almost 1 root Burdock root
- 1 tbsp Sugar
- 1 tbsp Sake
- 1 tbsp Soy sauce
- 1 heaping tablespoon Katakuriko
- 2 tbsp Oil
- 2 tbsp Soy sauce
- 5 tbsp Sake
- 6 tbsp Real mirin
- Shave the burdock root as if you were sharpening a pencil with a knife.
- Soak the shavings in a bowl of water with a little vinegar added.
- When all the burdock root is shaved, drain it well.
- If you leave it soaking for too long it will lose its fragrance so be careful.
- Stir fry the burdock root in 1 tablespoon of sesame oil, and remove from the pan.
- Cut the beef into bite-sized pieces, and massage in the sugar and sake.
- Leave for a bit, then massage in the soy sauce and katakuriko.
- Sprinkle the beef with 1 tablespoon of oil, and separate out the pieces.
- Add the a frying pan and stir-fry, then add the pre-cooked burdock root.
- Add the ingredients, simmer and reduce, and it's done.
- Sprinkle with some shichimi spice to taste.
