Quick Chicken Stir-Fry
- 1/4 cup crunchy peanut butter
- 1/4 cup MIRACLE WHIP Dressing Family Dollar $3.50 thru 02/07
- 2 Tbsp. sesame oil
- 2 Tbsp. water
- 2 tsp. lite soy sauce
- 1/2 tsp. crushed red pepper
- 1 clove garlic, minced
- 1 Tbsp. vegetable oil
- 1 lb. boneless skinless chicken breasts, cut into strips
- 1/2 lb. sliced fresh mushrooms
- 1 red bell pepper
- 1 cup snow peas, trimmed
- Mix all ingredients except vegetable oil, chicken and vegetables until blended.
- Heat vegetable oil in nonstick wok or large skillet on medium-high heat.
- Add chicken; stir fry 4 min.
- or until no longer pink.
- Add mushrooms and bell peppers; stir-fry 4 to 5 min.
- or until chicken is done.
- Add peanut sauce and snow peas; stir-fry 1 to 2 min.
- or until heated through.
