Noodle Kugel(A Good Side Dish With Fish Or Chicken.)
- 8 oz. pkg. noodles
- 4 eggs
- 1/4 lb. margarine
- 3 oz. cream cheese
- 1/2 c. sugar
- 1/2 pt. sour cream
- 1 tsp. vanilla
- 1/2 c. white raisins
- 1/2 tsp. cinnamon
- 2 generous handfuls corn flakes
- 1/2 stick margarine, melted
- 3 Tbsp. sugar
- 2 to 3 lb. Polish or Italian sausage, parboiled and sliced
- 1 medium onion, chopped
- 1 c. sliced carrots
- 1 (28 oz.) can whole tomatoes
- 1 c. chopped celery
- 3 potatoes, peeled and cubed
- 1/2 c. green egg noodles, cooked
- 1/2 c. white egg noodles, cooked
- 7 to 8 c. rich beef stock
- 1 clove garlic (optional)
- 1 tsp. brown sugar
- salt and freshly ground pepper to taste
- 3 c. cabbage, shredded
- garnish with 1 Tbsp. freshly grated Parmesan cheese per serving
- In a large soup pot, brown sausage.
- Drain off all fat.
- Add remaining soup ingredients, except cabbage, being careful with salt and pepper because sausage varies in seasonings.
