Greek-inspired Hamburgers with Tomato Cucumber Relish
- 3 Tablespoons Lemon Juice, Divided
- 3 Tablespoons Dried Oregano, Divided
- 3 Tablespoons Dried Thyme, Divided
- 1 Tablespoon Garlic Powder
- 2 teaspoons Sea Salt
- 2 teaspoons Fresh Cracked Black Pepper
- 3 pounds Hamburger
- 4 ounces, weight Feta Cheese, Crumbled
- 1 cup Tomatoes, Diced
- 1/2 whole Cucumber, Sliced And Quartered
- 2 cloves Garlic, Minced
- 2 Tablespoons Red Wine Vinegar
- 2 Tablespoons Olive Oil
- 2 cups Baby Spinach Leaves
- 9 whole Hamburger Buns
- Mix 2 tablespoons each of lemon juice, dried oregano and thyme, and the garlic powder, salt and pepper with the hamburger.
- Form into 9 patties with depressions in the centers.
- Fill the depressions with feta cheese and shape the burger around it.
- Chill for half an hour.
- While burgers are chilling, toss together ingredients for relish: tomatoes, cucumbers, garlic, the remaining lemon juice, dried oregano and thyme, the red wine vinegar, olive oil, and salt and pepper to taste.
- Chill relish.
- Grill or broil to burgers to desired doneness.
- Place relish, spinach leaves and burger on buns of choice and enjoy!
