Salmon Wrapped in Fig Leaves

  1. Preheat oven to 350 degrees.
  2. Drizzle salmon with olive oil and season with salt and pepper.
  3. Wrap each piece of salmon in a fig leaf and place on a baking sheet.
  4. Transfer to oven and bake until cooked through, 10 to 12 minutes.
  5. Set aside and keep warm.
  6. Place olive oil in a spray bottle and spray kale with olive oil; season with salt and pepper.
  7. Place kale on a baking sheet and transfer to oven.
  8. Bake until kale is crispy, about 8 minutes.
  9. Divide kale evenly between 4 plates.
  10. Unwrap salmon and serve immediately on fig leaves with kale.
