Crispy Persimmon Scones - Made with Pancake Mix

  1. Place the butter on top of the pancake mix, and microwave for 30 seconds until it softens.
  2. Start preheating the oven to 170C .
  3. Mix the flour and butter with a rubber spatula by folding it into itself.
  4. It will gradually break up into small clumps.
  5. Peel the skins off the persimmons, cut into 1cm pieces, and mix it in.
  6. If you steam the persimmons to soften them, then you can just place them on top and squish them .
  7. The juice from the persimmons still gradually seep into the batter.
  8. If the persimmons are hard and don't have a lot of juice, the please mix in 1 teaspoon of milk.
  9. Gather the dough on top of a pan covered in parchment paper, and press down to 1.5 cm thickness.
  10. Use a knife to cut into 8 equal pieces.
  11. Line up the pieces with spaces between each, bake in an oven at 170C for 25 minutes, and it's done (>v
