Crispy Persimmon Scones - Made with Pancake Mix
- 1 one large Persimmon
- 200 grams Pancake mix
- 50 grams Butter (unsalted)
- Place the butter on top of the pancake mix, and microwave for 30 seconds until it softens.
- Start preheating the oven to 170C .
- Mix the flour and butter with a rubber spatula by folding it into itself.
- It will gradually break up into small clumps.
- Peel the skins off the persimmons, cut into 1cm pieces, and mix it in.
- If you steam the persimmons to soften them, then you can just place them on top and squish them .
- The juice from the persimmons still gradually seep into the batter.
- If the persimmons are hard and don't have a lot of juice, the please mix in 1 teaspoon of milk.
- Gather the dough on top of a pan covered in parchment paper, and press down to 1.5 cm thickness.
- Use a knife to cut into 8 equal pieces.
- Line up the pieces with spaces between each, bake in an oven at 170C for 25 minutes, and it's done (>v
