Tony Roma's Carolina Honey Barbecue Sauce by Todd Wilbur

  1. For sauce: Combine all ingredients for sauce in saucepan.
  2. Blend ingredients with whisk until smooth over high heat.
  3. When mixtures come to a boil, reduce head simmer uncovered 30-40 minutes until mixtures thickens.
  4. Ribs: Cut each rack of ribs into sections of 4-6 rib each.
  5. Preheat oven to 300 degrees F.
  6. Tear off 4 pieces of aluminum foil 6-7 inches larger than the ribs.
  7. Coat front and back of ribs with sauce.
  8. Place each rack of ribs onto a piece of foil and wrap tightly.
  9. Place the foil packets in the oven, seam side facing up and bake for 2-21/2 hours.
  10. Remove ribs from oven when done and coat both sides of ribs with sauce.
  11. Place ribs on preheated grill and grill for 2-4 minutes.
  12. Serve with additional sauce.
