Tony Roma's Carolina Honey Barbecue Sauce by Todd Wilbur
- 1 cup ketchup
- 1 cup vinegar
- 12 cup molasses
- 12 cup honey
- 1 teaspoon liquid smoke
- 12 teaspoon salt
- 14 teaspoon garlic powder
- 14 teaspoon onion powder
- 14 teaspoon Tabasco sauce
- 4 lbs pork spareribs or 4 lbs beef back ribs
- For sauce: Combine all ingredients for sauce in saucepan.
- Blend ingredients with whisk until smooth over high heat.
- When mixtures come to a boil, reduce head simmer uncovered 30-40 minutes until mixtures thickens.
- Ribs: Cut each rack of ribs into sections of 4-6 rib each.
- Preheat oven to 300 degrees F.
- Tear off 4 pieces of aluminum foil 6-7 inches larger than the ribs.
- Coat front and back of ribs with sauce.
- Place each rack of ribs onto a piece of foil and wrap tightly.
- Place the foil packets in the oven, seam side facing up and bake for 2-21/2 hours.
- Remove ribs from oven when done and coat both sides of ribs with sauce.
- Place ribs on preheated grill and grill for 2-4 minutes.
- Serve with additional sauce.
