Gigi's Peanut Butter & Jelly Waffles
- 1 1/2 cup flour
- 4 tsp baking powder
- 1/2 tsp salt
- 2 eggs
- 1/2 cup butter (melted)
- 1 3/4 cup milk
- 1/2 cup peanut butter
- 1 Jar of your favorite jelly
- 1 bottle of Ihop Butter Pecan Syrup
- In a large mixing bowl whisk together all dry ingredients.
- Separate the eggs, adding the yolks to the dry ingredient mixture and placing the whites in a small mixing bowl.
- Beat the whites until moderately stiff, set aside.
- Add milk, melted butter and peanut butter to the dry ingredient mixture and blend.
- Fold stiff eggwhites into the mixture.
- Ladle mixture into a hot waffle iron and cook for 2 minutes and 30 seconds or 3 minutes depending of how golden you want them.
- In a saucepan, take 4 spoonfuls of your favorite jelly (i used grape) and ihops butter pecan syrup.
- Mix together until blended and the jelly has the consistency of a sauce (melted).
- Assemble waffle as you desire, pour jelly syrup and enjoy.
- Could also decorate with a little bit of powder sugar sifted over waffles.
