Santa Fe Kabobs
- 3 cups A.1. Original Sauce
- 3 cups chunky salsa
- 3/4 cup lime juice Safeway 3 ct For $1.00 thru 02/09
- 3 qt. boneless beef top round steaks, cut into thin strips King Sooper's 1 lb For $3.77 thru 02/09
- 6 each red onions, each into 12 wedges
- 6 each large green peppers, cut into 1-inch squares
- 6 each large red peppers, cut into 1-inch squares
- 24 each flour tortillas (7 inch)
- Combine steak sauce, salsa and lime juice; set aside.
- Thread 2 of the steak strips, accordion style, onto 48 skewers (or eight skewers for trial recipe), alternating onions and peppers between folds of the steak.
- Place in shallow pan; cover.
- Refrigerate until ready to use.
- Grill kabobs on medium heat 2 to 3 min.
- on each side for medium doneness (160F), brushing occasionally with 3 cups of the steak sauce mixture (or 1/2 cup for trial recipe).
- For each serving: Remove steak and vegetables from two of the skewers; place on 1 of the tortillas.
- Drizzle with 2 Tbsp.
- of the remaining steak sauce mixture.
- Roll up.
