Roasted Tomato Crostini

  1. SPRAY both sides of bread with oil.
  2. Place on a baking tray and bake in a hot oven 200oC for 10 minutes or until golden, turning once.
  3. PLACE tomatoes on a baking tray.
  4. Season then top with bocconcini and spray with oil.
  5. Grill under a hot grill for 3-4 minutes or until the cheese is melted and golden.
  6. SPREAD toast with VEGEMITE then top with rocket.
  7. Lift tomatoes onto rocket and drizzle with oil.
  8. Serve immediately.
