Roasted Tomato Crostini
- 1/4 baguette, cut diagonally into 8 x 1 cm thick slices
- Olive oil spray
- 2 ripe tomatoes, thickly sliced King Sooper's 1 lb For $0.99 thru 02/09
- salt and freshly ground black pepper, to taste
- 4 bocconcini, torn
- 1 tablespoon VEGEMITE
- 20 g baby rocket leaves
- Extra virgin olive oil, for drizzling
- SPRAY both sides of bread with oil.
- Place on a baking tray and bake in a hot oven 200oC for 10 minutes or until golden, turning once.
- PLACE tomatoes on a baking tray.
- Season then top with bocconcini and spray with oil.
- Grill under a hot grill for 3-4 minutes or until the cheese is melted and golden.
- SPREAD toast with VEGEMITE then top with rocket.
- Lift tomatoes onto rocket and drizzle with oil.
- Serve immediately.
