Southwestern Corn Soup
- 1 12 cups milk
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can whole kernel corn, drained
- 34 lb sliced land o lakes deli American cheese, cut into 1-inch cubes
- 1 medium tomatoes, chopped
- 2 tablespoons poblano chiles, chopped
- 1 teaspoon chopped fresh cilantro
- Combine all ingredients except cilantro in a 3-quart saucepan.
- Cook over medium heat stirring occasionally, until heated through and cheese is melted (10-12 minutes).
- Garnish with cilantro.
