Michigan Baked Beans
- 1 lb. dried Great Northern beans
- 6 cups water (reserve later)
- 2 tsp. salt
- 1/2 tsp. dry mustard
- 1 lg. onion, minced
- 1/3 cup dark brown sugar
- 1/3 cup dark molasses
- 1/2 cup chili sauce
- 2-1/2 cup canned tomatoes
- 8 slices bacon
- Cover beans with water; bring to a boil and boil for two minutes.
- Cover pan and let stand for one hour.
- Simmer until beans are almost tender, approximately 1- 1/2 hours.
- Drain and reserve liquid.
- Add remaining ingredients except bacon; pour into shallow baking pan.
- Top with bacon slices cut into halves.
- Bake in pre-heated 300F oven for two hours, adding more reserved bean liquid, if necessary.
