Microwave Scotch Toffee Bars Recipe
- 1/3 c. butter, melted
- 2 c. quick cooking rolled oats
- 1/2 c. brown sugar, firmly packed
- 1 (6 ounce.) pkg. chocolate morsels
- 1/4 c. dark corn syrup
- 1 1/2 teaspoon vanilla
- 1/2 teaspoon salt
- 1/4 c. nuts, minced
- Combine butter, oats, brown sugar, corn syrup, vanilla and salt in bowl.
- Press firmly against bottom of 8 x 8 inch or possibly 9 x 9 inch microwave safe dish.
- Bake in microwave oven on full power for 3 to 4 min in 8 x 8 inch pan, or possibly till bubbling all over.
- Turn dish once during cooking time.
- Smooth surface.
- Top with chocolate morsels.
- Heat in microwave oven on Level 6 (roast) for 1 minute, or possibly till chocolate morsels are melted.
- Spread chocolate proportionately over bottom crust.
- Sprinkle with nuts.
- Chill.
- Cut into bars.
- Store in airtight container in refrigerator.
- Yield: 12 bars.
