Hedgiehog's Chicken Tikka Masala
- 1 12 lbs boneless skinless chicken thighs
- 1 cup plain yogurt
- 2 tablespoons lemon juice
- 2 teaspoons ground cumin
- 2 teaspoons chili powder
- 2 teaspoons black pepper
- 1 teaspoon cinnamon
- 12 teaspoon turmeric
- 1 teaspoon salt
- 1 tablespoon ginger-garlic paste (can be bought at most Indian shops or made at home)
- 1 tablespoon chopped cilantro
- 1 tablespoon ghee or 1 tablespoon butter
- 2 -3 minced garlic cloves
- 2 -3 green chilies, chopped
- 1 medium onion, chopped
- 1 teaspoon salt
- 2 tablespoons brown sugar
- 12 teaspoon ground cardamom
- 2 teaspoons ground coriander
- 1 teaspoon cumin
- 1 teaspoon paprika
- 2 teaspoons garam masala
- 1 (8 ounce) can tomato sauce
- 1 cup cream
- chopped cilantro (to garnish)
- Rinse the chicken, pat dry and cut into bite size pieces.
- Begin making the marinade:.
- Combine all marinade ingredients and coat the chicken with it.
- Leave in refrigerator for several hours or preferably overnight.
- Cook the chicken either on a grill or under broiler.
- For the sauce:.
- On medium heat , cook the onions in melted ghee or butter.
- After a few minutes, add in garlic and chilies.
- Add in all the spices and brown sugar.
- Stir in chicken and tomato sauce.
- Simmer for 10 minutes.
- Add in the cream and combine.
- Garnish with chopped cilantro.
