Polynesian Sweet and Sour Fish: L'a Momona a Paakai
- 1 ounce ginger root, peeled and minced
- 4 ounces mirin
- 1 ounce soy sauce
- 2 1/2 pounds mahi-mahi, cut into 1/2-inch cubes
- Oil, for frying
- 7 ounces flour
- 7 ounces water
- 3 ounces soy sauce
- 1 teaspoon sugar
- 2 eggs
- 1/2 teaspoon baking soda
- 1 teaspoon garlic powder
- Seasoned flour, as needed
- 20 ounces sweet and sour sauce
- Combine ginger, mirin, and soy sauce and marinate the fish for 30 minutes.
- Preheat oil in a deep-fryer to 350 degrees F.
- Mix together batter ingredients.
- When preparing an order, drain and dredge fish cubes in seasoned flour.
- Coat fish with the batter and deep-fry until golden brown.
- In a bowl, gently toss one portion of fried fish with 4 ounces of hot sweet and sour sauce.
- Serve immediately on a warmed dinner plate.
