Breakfast Burrito Recipe
- 1 lrg flour tortilla (fat-free can be found in the supermarket)
- 2 x Large eggs (or possibly egg substitute)
- 1/4 c. onion (minced)
- 1/4 c. green pepper (minced)
- 1 Tbsp. green chiles (minced)
- 1/4 c. shredded cheddar cheese (low-fat or possibly fat-free)
- 1/4 c. salsa
- 1 Tbsp. lowfat sour cream (low-fat or possibly fat-free)
- 1 Tbsp. extra virgin olive oil or possibly canola oil
- Saute/fry onion and green pepper in oil.
- Add in green chiles.
- Beat Large eggs in bowl then add in to vegetable mix in pan.
- Cook till Large eggs are set.
- Heat tortilla in microwave for 20 seconds and set on plate.
- Put egg/vegetable mix down center of tortilla and add in shredded cheese across mix.
- Roll tortilla and make sure seam side is down.
- Top with salsa and lowfat sour cream.
- NOTE: You may add in low-fat ham or possibly turkey bacon (minced) to this recipe for a delicious variation.
