Low-Fat Chicken Salad
- 1 can white chicken packed in water
- 1/2 cup chopped celery
- 1/2 cup fat free mayonnaise
- 1/2 tsp. sugar
- 1 cup diced pineapple, drained
- 1/2 cup fat free sour cream
- 1/2 tsp. Accent (MSG)
- 2 tsp. lemon juice
- 6 lettuce leaves
- 3 tomatoes, quartered
- Drain water off chicken.
- In large bowl, combine all ingredients, except lettuce and tomatoes.
- Mix well.
- Chill for 2 hours.
- Serve on 1 crisp lettuce leaf and garnish with 2 tomato wedges.
