Summer Chicken & Hoseradish Salad
- 2 slices bacon
- 2 cups cooked chicken, chopped
- 1 (15 ounce) can kidney beans, rinsed and drained
- 12 cup corn
- 2 large green onions, chopped
- 14 cup raisins, chopped
- cilantro
- salt
- pepper
- 34 cup mayonnaise
- 2 tablespoons horseradish sauce
- Cook bacon until crispy, drain on paper towel and allow to cool.
- Chop into small bits and set aside.
- In a large bowl combine the next five ingredients.
- Add cilantro, salt, and pepper to taste,.
- Fold mayo and horseradish sauce into the chicken mixture.
- Then add the reserved bacon and stir to combine.
- Chill at least one hour before serving.
